Ingredients

10 -20 small dried red chilies ( optional )
3 tablespoons sea salt
2 tablespoons black peppercorns
2 tablespoons szechuan peppercorns
500 g rice flour ( or tempura flour , I used tempura batter instead )
1 kg squid , tubes cut in half so it flat , then into strips . they will curl in the oil
500 ml peanut oil
2 tablespoons coriander , chopped ( I do n't add this )
2 limes ( cut in half for squeezing , I do n't add this either , but it would be nice ! ! ! ! ! )

Instructions

1.In a mortar and pestle, crush the dried chilies, sea salt, black peppercorns, and Szechuan peppercorns until coarsely ground.
2.In a large bowl, mix together the rice flour and the spice mixture.
3.Dip the squid strips into the mixture, making sure they are fully coated.
4.In a wok or heavy-bottomed pan, heat the peanut oil over high heat until it reaches 180°C/350°F.
5.Fry the squid strips in batches until golden brown and crispy, about 2-3 minutes per batch.
6.Drain the squid on a paper towel-lined plate and sprinkle with chopped coriander.
7.Serve hot with lime wedges on the side.
