3 3 cups chard leaves or 3 cups kale
1/2 cup cremini mushroom
1 pinch fresh thyme
1/2 cup salsa
1/2 - 1 cup water , if needed

Instructions

1.Heat a large pot over medium-high heat and add coconut oil.
2.Add onion, garlic, ginger, and nutmeg. Sauté for 2-3 minutes.
3.Add curry powder, cinnamon, black-eyed peas, chard leaves or kale, mushrooms, thyme, salsa, and 1/2 cup of water.
4.Stir and cover the pot for 5-10 minutes to allow collards to wilt.
5.Remove the cover and continue cooking until the dish reaches desired consistency. Add soy sauce and black pepper to taste.
