2 eggplants , sliced in 1/3 inch slices ( medium )
coarse sea salt
1/3 cup olive oil
1/3 cup parmesan cheese , grated
1/3 cup provolone cheese , grated
1/3 cup mozzarella cheese , grated
3 garlic cloves , minced
1 small onion , finely chopped
1 tablespoon olive oil
1 can diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 cup dry white wine
1/2 cup chicken stock

Instructions

1.Preheat the oven to 375°F (190°C).
2.Place the eggplant slices in a colander and sprinkle them with coarse sea salt. Leave them for 30 minutes to sweat, then rinse them thoroughly and pat them dry with a paper towel.
3.In a large mixing bowl, combine the three types of grated cheese and minced garlic.
4.Layer the dried eggplant slices in a baking dish, then evenly spread the cheese and garlic mixture over each layer.
5.In a separate frying pan, heat the olive oil and sauté the onion until soft and lightly caramelized. Add the diced tomatoes, dried oregano, and dried thyme, then stir in the white wine and chicken stock.
