Ingredients

1 tablespoon olive oil
1 teaspoon fresh lemon juice
1/4 teaspoon paprika
1 dash salt

4 medium chicken breast halves , skinless & boneless
2 whole wheat pit bread rounds , split and toasted
1 carton hummus ( store-bought , your choice )
3/4 cup tomatoes , coarsely chopped
1/2 cup cucumber , chopped
fresh cilantro
plain fat-free yogurt

Instructions

1.In a small bowl, combine the olive oil, lemon juice, paprika, salt, and black pepper to make the marinade.
2.Place the chicken breasts in a large ziplock bag, pour the marinade over them, and seal the bag. Massage the bag to ensure the chicken is evenly coated with the marinade. Let the chicken marinate in the fridge for at least 30 minutes.
3.Heat a grill pan over medium-high heat. Remove the chicken breasts from the marinade and discard the excess marinade.
4.Cook the chicken for about 7-8 minutes per side, or until fully cooked through.
5.While the chicken is cooking, prepare the veggies. In a medium bowl, mix together the chopped tomatoes and cucumber.
6.To assemble the tostados, spread a generous layer of hummus on each pit bread round. Top with the tomato-cucumber mixture and cooked chicken. Serve with a dollop of plain fat-free yogurt and fresh cilantro.
