Ingredients

2 French baguettes , cut into 1-inch-thick slices
cooking spray
1 cup chopped onion
4 garlic cloves , minced
1 package presliced mushrooms
1 tablespoon all-purpose flour
2 bags Baby Spinach
1/2 teaspoon salt , divided
1/2 teaspoon black pepper , divided
3 cups thinly sliced plum tomatoes ( about 1 pound )
1 package crumbled feta cheese
3/4 3/4 cup romano cheese , divided or 3/4 cup sharp provolone cheese , grated divided
3 cups nonfat milk
2 tablespoons Dijon mustard
1 1/2 teaspoons dried oregano
5 large eggs , lightly beaten
4 large egg whites , lightly beaten
Mediterranean Spinach Strata is a delightful breakfast dish that is perfect for a special occasion or brunch. This dish has a unique blend of flavors that come from the crispy bread, tender spinach, tangy feta cheese, and juicy tomatoes. Instructions

1.Preheat oven to 375°.
2.Arrange bread in a single layer on a baking sheet. Bake at 375° for 10 minutes or until toasted.
3.Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion to pan; sauté 3 minutes. Add garlic; sauté 1 minute. Add mushrooms; sauté 5 minutes or until moisture evaporates. Sprinkle flour over mushroom mixture; cook 1 minute, stirring constantly. Add spinach, 1/4 teaspoon salt, and 1/4 teaspoon pepper; cook 2 minutes or until spinach wilts.
4.Arrange half of bread slices in a 13 x 9-inch baking dish coated with cooking spray. Top with half of spinach mixture. Sprinkle with half of tomatoes, half of feta, and half of romano cheese. Repeat layers.
5.Combine milk and next 5 ingredients (through egg whites) in a large bowl, stirring well with a whisk. Pour egg mixture over bread mixture; press down to submerge. Cover and chill 8 hours or overnight.
6.Preheat oven to 350°.
7.Uncover strata, and bake at 350° for 1 hour or until lightly browned and set.
8.Let stand for 10 minutes before serving.
