Ingredients

2 tablespoons hot water
3 -4 Spanish saffron threads
2 cups rice ( uncooked )
1/4 cup extra virgin olive oil
4 cups vegetable broth
1 cup green beans
1 cup black olives ( whole )
1 red bell pepper , chopped
1/2 - 1 teaspoon white pepper
1/2 - 1 teaspoon cayenne pepper
1 cup roma tomato , chopped
Mediterranean Paella (Vegetarian) is a traditional Spanish dish with rice and vegetables. It is easy to make and comes with a lot of health benefits. Instructions

1.Soak saffron threads in 2 tbsp of hot water for at least 10 min.

4.Add rice and stir for about 1 min to coat the rice with vegetable broth.
5.Add the soaked saffron threads with its water and stir until it is evenly mixed with the rice.
6.Add the remaining vegetable broth to the skillet and let it boil.
7.Reduce heat to low, cover the skillet, and let the paella simmer for 18-20 min or until the rice is cooked.
8.Remove from the heat, add black olives, and chopped tomatoes. Stir and let it sit for 5 mins before serving.
