Ingredients

1 very large zucchini of 2-3 medium zucchini
1 small zucchini
1 small onion , chopped
2 tablespoons olive oil
2 tablespoons ricotta cheese
1/4 lb italian sweet sausage
1 -2 tablespoon black olives
2 slices whole wheat bread , toasted and cubed
1 tablespoon crushed red pepper flakes
1 large egg
1/4 cup parmesan cheese
1/4 cup red pepper
salt and pepper
Mediterranean Grilled Stuffed Zucchini is a healthy and flavorful meal that is perfect for summer evenings. Instructions

1.Preheat a grill or grill pan to medium heat.
2.Cut the very large or medium zucchini in half lengthwise and scoop out the seeds and some of the flesh. Leave about 1/4 inch of flesh around the edges.
3.Cut the small zucchini, onion, and red pepper into small chunks.
4.In a skillet over medium heat, add the olive oil, chopped onion, and sweet italian sausage. Cook until browned.
5.Add the small zucchini, red pepper, and black olives to the skillet. Continue cooking until the vegetables are tender.
6.Remove skillet from heat, and stir in the ricotta cheese, toasted and cubed bread, crushed red pepper flakes, large egg, parmesan cheese, salt, and pepper.
7.Stuff the zucchini shells with the mixture and place them on the grill.
8.Grill for 15-20 minutes, or until the zucchini is tender and the stuffing is lightly browned. Serve hot.
