1 can garbanzo beans , rinsed , drained ( chickpeas )
2 cloves garlic
1 tablespoon fresh rosemary
3 large eggs
6 tablespoons water
2 tablespoons extra virgin olive oil
3 tablespoons all-purpose flour
1 1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon baking powder
6 tablespoons olive oil ( or more )
pomegranate seeds ( optional )
Mediterranean Chickpea Latkes are a healthy and delicious twist on traditional potato pancakes. Instructions

1.In a food processor, blend garbanzo beans, garlic, and fresh rosemary until coarsely mashed.
2.Add in eggs, water, extra virgin olive oil, all-purpose flour, ground cumin, salt, black pepper, and baking powder. Mix together until well combined.
3.Heat olive oil in a large non-stick skillet over medium heat, scoop 2 tablespoons of the mixture into the skillet per latke. Flatten and cook four minutes on each side, or until golden brown.
4.Serve latkes topped with pomegranate seeds if desired.
