Instructions

1.Place the morel trimmings in a pot of boiling water and let boil for 5 minutes. Set aside.

3.Add the madeira wine and cook for 3 minutes until the wine reduces and thickens. Set aside.
4.Season the veal medallions with salt and pepper. Dust each medallion in flour.
5.In a separate skillet, heat the olive oil and remaining butter on medium heat. Add the medallions and cook until browned, about 3 minutes on each side.
6.Remove the medallions from the skillet and keep warm.
7.Pour excess fat out of the skillet and add the morel cooking water and white vermouth to the skillet. Cook on medium heat until liquid has reduced by half.
8.Add the glace de viande and the morel mushrooms and cook for 2 minutes. Season with salt and pepper.
9.Add the shallot and madeira sauce to the skillet and cook for another minute.
10.Pour sauce over medallions and serve hot.
