Ingredients

2 teaspoons cumin seeds ( reserve 1/2 for sauce )
1/2 teaspoon Mexican oregano
5 garlic cloves , peeled
1/4 medium white onion , peeled
1/8 cup cooked white rice
1 lb ground beef , ground lamb or 1 lb ground pork
4 tablespoons olive oil
6 roma tomatoes

6 chipotle chiles in adobo
2 cups chicken broth , preferably homemade
2 cups cooked white rice ( optional )
Meatballs in Chipotle Sauce (Albondigas Enchipotladas) is a Mexican dish that is popular in many southern states of the USA, especially in Texas. The smoky and spicy flavor of the chipotle pepper gives a unique taste to the tomato-based sauce in which the juicy meatballs are cooked. These meatballs are perfect for any weeknight dinner or a family get-together. Served with cooked white rice, cilantro, and avocado slices, they make a satisfying meal that everyone is going to enjoy.

Instructions

1.In a grinding mortar, grind 1 1/2 teaspoons of cumin seeds, 1/2 teaspoons of Mexican oregano, and 5 garlic cloves until smooth.
2.Mix the ground garlic and spice mixture with 1/4 medium peeled and cooked white onion, 1/8 cup cooked white rice, and 1 lb of ground beef, pork or lamb. Mix well and shape into approximately 2-inch meatballs.
3.Heat 4 tablespoons of olive oil in a heavy-duty skillet and brown the meatballs on all sides, about 8-10 minutes. Reserve on a plate.
4.In a blender, puree 6 roma tomatoes, 4 peeled garlic cloves, 1 tablespoon of Mexican oregano, 1 teaspoon of cumin seeds, 1/2 teaspoon black pepper, salt to taste, and 6 chipotle chiles in adobo. Blend well until smooth.
5.In the same skillet that you browned the meatballs, pour the tomato-chipotle sauce and 2 cups of chicken broth. Bring to a simmer and add the browned meatballs. Lower the heat and cook covered for 25-30 minutes, stirring occasionally.
6.Serve hot with cooked white rice, cilantro, and avocado slices.
