1/2 onion , roughly chopped

2 slices white bread , crusts removed
1 egg
18 ounces ground lamb or 18 ounces ground beef
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon fresh ground black pepper
4 teaspoons butter or 4 teaspoons oil
1/2 onion , finely chopped

1/2 preserved lemon , pulp removed and rind cut into strips ( optional )

Instructions

1.Place onion and Italian parsley in a food processor, and grind until smooth. Add the white bread, and pulse until the bread is in small bits. Transfer to a large mixing bowl.
2.Add the egg, ground lamb (or beef), cumin, paprika, and black pepper to the mixing bowl with the bread mixture.
3.Mix well with your hands until the mixture is thoroughly combined and has a smooth texture. Cover and let it rest for 10-15 minutes.
4.In a large frying pan, melt butter or oil over medium-high heat. Add finely chopped onion, paprika, turmeric, and cumin. Fry for a few minutes, until the onions are soft and the spices are fragrant. If the pan is too dry, add some more oil or butter.
5.Add chili (or cayenne pepper) to the frying pan and stir for 1-2 minutes. Pour in the chicken stock gradually, stirring constantly. Bring the mixture to a boil, then reduce the heat and let it boil gently for 5 minutes.
6.Using your hands, make small balls of the meat mixture (about the size of a golf ball). Carefully add them to the frying pan, one by one, so that they rest in the sauce. Cover the pan with a lid and let it simmer for about 30 minutes, or until the meatballs are cooked through.
7.Once the meatballs are done, sprinkle chopped fresh cilantro and Italian parsley on top. Add lemon juice and preserved lemon rind, if using. Mix gently. Serve hot on a bed of couscous or with a side of crusty bread.
