Ingredients

4 roasted red peppers ( see note below )
2 garlic cloves
2 -3 sprigs Italian parsley
1 lb lean ground beef
3/4 cup milk
4 eggs
1/2 teaspoon spanish smoked paprika
1/4 teaspoon salt
1 cup breadcrumbs
1 cup olive oil ( for frying )
1 large yellow onion
2 tablespoons unbleached wheat flour
1 cup white wine
1 cup beef broth

Instructions

1.Preheat the oven to 375°F. Cut the tops off the roasted red peppers and remove seeds.

3.Mix well and add breadcrumbs to get a soft consistency.
4.Stuff each pepper with the beef mixture and put back the pepper top.
5.Arrange the peppers in a baking dish and bake in the oven for 30 minutes.
6.While the peppers are baking, prepare the sauce. Heat olive oil in a large saucepan over medium heat. Add sliced yellow onion and remaining minced garlic clove. Cook until the onion is softened, and then add 2 tablespoons of flour, stirring constantly.
7.Slowly whisk in 1 cup of white wine and 1 cup of beef broth,
8.Cook for 5-8 minutes to thicken, stirring frequently.
9.Pour the sauce over the baked peppers. Serve hot.
