5 medium potatoes
1 onion , chopped
1/4 - 1/2 cup skim milk
4 tablespoons 4 % low-fat cheese
1 cup diced ham
2 cups chopped cabbage
salt & pepper
paprika ( if you dare ) or cayenne pepper ( if you dare )
cooking spray ( I use the olive oil one )

Instructions

4.Drain the potatoes and add the cooked onions, cabbage, milk, cheese, and salt & pepper to the pot.
5.Mash the mixture together until it is creamy and smooth.
6.Place the ham in a separate skillet and cook until it is browned and heated through.
7.Serve the colcannon topped with the diced ham and sprinkled with paprika or cayenne pepper if desired.
