Ingredients

3/4 cup butter or 3/4 cup margarine
3/4 cup flour
3 teaspoons salt
1/8 teaspoon nutmeg
1 quart milk
2 cups turkey broth ( recipe follows )
4 egg yolks
1 cup heavy cream
1/2 cup dry sherry
1 package thin spaghetti
6 cups leftover cooked turkey or 6 cups cooked chicken , into into 1 . 5-inch pieces
2 cans whole mushrooms , drained
1 package sharp cheddar cheese , grated ( 2 cups )

Instructions

1.Preheat oven to 375 degrees F.
2.Melt 1/4 cup butter and toss with bread crumbs. Spread in shallow baking pan and bake until lightly browned. Set aside.
3.Melt remaining butter in large saucepan. Blend in flour, 2 teaspoons salt, and nutmeg. Add milk and turkey broth all at once. Cook over medium-high heat, stirring constantly, until mixture comes to boiling.
4.Beat egg yolks slightly and mix in cream. Add a small amount of hot sauce to egg mixture, return to saucepan, and mix well. Stir in sherry.
5.Cook spaghetti according to package directions, except omit salt. Drain.
6.In large bowl, toss spaghetti, turkey, mushrooms, and 1 cup cheese with the sauce. Pour into 13 x 9-inch baking dish. Sprinkle top with bread crumbs and remaining cheese.
7.Bake for 30-40 minutes until bubbly and brown.
