Instructions

1.Rinse garbanzo beans and soak overnight in a large bowl with enough water to cover them.
2.Drain the beans and transfer to a pot. Add enough water to cover beans by 2 inches.
3.Bring the pot to a boil; keep it boiling rapidly for 10 minutes.
4.Lower heat and let the beans simmer, uncovered, until tender, about 1-2 hours.
5.Drain the beans, rinse with cold water, and peel off the skins.
6.In a food processor, combine the garlic cloves, lemon juice, and tahini until smooth.
7.Add in garbanzo beans and salt to taste. Process until smooth and creamy.
