Ingredients

2/3 cup butter , softened
2 3/4 cups flour , sifted
2/3 cup powdered sugar
2 teaspoons baking powder
1 egg
1 egg yolk
3 tablespoons sour cream
1 tablespoon butter , softened
2 tablespoons flour
6 egg whites
3 3/4 cups powdered sugar
8 ounces powdered cocoa mix
8 ounces almonds , ground
8 ounces dates , pitted & finely sliced
2 cups powdered sugar
3 tablespoons rum
Mazurek Wilenski is a traditional Polish Easter cake known for its unique combination of flavors. The Vilnian Mazurka variation of the cake has been popularized in Lithuania. It is often served during Easter and Christmas. This cake is rich, flavorful, and sweet, which makes it a perfect dessert for celebrations with family and friends.

Instructions

1.Preheat the oven to 350°F (180°C).
2.Beat 2/3 cup of softened butter using an electric mixer until creamy.
3.Gradually add 2 3/4 cups of sifted flour, 2/3 cup of powdered sugar, and 2 teaspoons of baking powder while continue to mix.
4.Beat 1 egg and 1 egg yolk in a separate bowl and add it to the mixture.
5.Add 3 tablespoons of sour cream and mix for another minute.
6.Take a baking tray lined with parchment paper and grease it with 1 tablespoon of softened butter and 2 tablespoons of flour.
7.Pour the mixture onto the tray and bake for 35-40 minutes.
8.While the Mazurek is baking, beat 6 egg whites using an electric mixer until stiff peaks form.
9.Gradually add 3 3/4 cups of powdered sugar while continuing to beat.
10.Add 8 oz of powdered cocoa mix, 8 oz of ground almonds, and 8 oz of finely sliced pitted dates into the mixture and fold gently.
11.When the Mazurek has finished baking, take it out of the oven and allow it to cool for 5 minutes.
12.Spread the egg white mixture on top of the Mazurek and bake for another 10-15 minutes.
13.Once the Mazurek Wilenski has finished baking for the second time, allow it to cool completely.
14.Finally, mix 2 cups of powdered sugar with 3 tablespoons of rum and spread it on top of the Mazurek.
