Ingredients

4 pounds whole chicken
2 onions , cut into 1-inch cubes
3 carrots , sliced
2 stalks celery , thickly sliced
1 cup chopped fresh dill weed
salt to taste
2 tablespoons vegetable oil
2 tablespoons chicken cracklings ( grebenes ) , finely minced
2 eggs , beaten
1/2 cup matzo meal
1 teaspoon salt
1/4 cup vegetable broth
Matzoh Ball Soup is a traditional Jewish dish, often served during Passover Seder dinner. It is also a popular dish to eat during cold weather months in North America. The soup consists of a chicken broth base with shredded chicken, vegetables and pillowy matzoh balls added. The matzoh balls are made from matzo meal, eggs, and oil, and are cooked in boiling water until light and fluffy.

Instructions

1.In a large pot, add chicken, onions, carrots, celery, dill weed, and salt. Cover with water and bring to a boil.
2.Reduce heat and let it simmer for 2-3 hours until the chicken is cooked through.
3.Once the chicken is cooked, remove it from the pot, let it cool and shred the meat. Set the meat aside.
4.In a separate bowl, mix the vegetable oil, chicken cracklings, eggs, matzo meal, salt and vegetable broth. Let it chill in the refrigerator for 30 minutes.
5.Bring a pot of water to a boil. Form the matzoh mixture into balls with your hands and drop them into the boiling water one by one. Simmer the matzoh balls for 30-40 minutes.
6.Add the shredded chicken back into the pot and serve hot.
