Ingredients

1 1/2 cups whole milk
1 1/2 cups heavy cream
5 large egg yolks
1/2 cup sugar
1/8 teaspoon salt ( salt will give your ice cream a glossy appearance , and help to make it a little firmer )
1 tablespoon matcha green tea powder ( do not use ordinary green tea )
1/4 cup hot water

Instructions

1.In a medium saucepan, heat the whole milk, heavy cream, and salt over medium heat until simmering.
2.Meanwhile, whisk together the egg yolks and sugar in a separate bowl until pale and thick.
3.In a small bowl, whisk together the matcha powder and hot water until smooth.
4.Slowly pour the heated milk mixture into the egg yolks, whisking constantly to prevent curdling.
5.Pour the egg yolk mixture back into the saucepan and stir over low heat until thickened, making sure not to boil. This step can take up to 10 minutes, so be patient!
6.Once the mixture has thickened enough to coat the back of a spoon, remove from heat and stir in the matcha mixture.
7.Strain the ice cream base through a fine mesh sieve into a clean bowl.
8.Cover and refrigerate the ice cream base for at least 4 hours or until chilled through.
9.If using an ice cream maker, churn the mixture according to the manufacturer's instructions.
10.If making without an ice cream maker, pour the ice cream base into a shallow dish and freeze for 1 hour. Then, remove from the freezer and stir well to break up any ice crystals. Repeat this process every hour until the ice cream is firm and creamy.
