Instructions

1.Wash the red bell peppers and tomatoes thoroughly and wipe them dry with a clean kitchen towel.
2.Preheat your grill to high heat and place the bell peppers onto the grill.
3.Grill the peppers, turning them occasionally until their skin becomes charred and blistered on all sides. This should take about 10-15 minutes.
4.While the peppers are grilling, remove the stem from the tomatoes and roughly chop them into small pieces.
5.Using a knife, mince the garlic cloves into a fine paste.
6.Once the bell peppers are completely grilled, place them in a bowl and cover them with a kitchen towel for about 20 minutes. This will help the peppers sweat and loosen their skins, making them easier to peel.
7.After 20 minutes, peel off the charred skin and remove the seeds and membrane from the bell peppers.
8.Finely chop the bell peppers and mix them with the chopped tomatoes and garlic.
9.Drizzle the olive oil over the mixture and squeeze the juice of 1 lemon over it.
10.Season with sea salt and give the mixture a final mix.
11.Your Moroccan Matbucha is ready to be served!
