Ingredients

1/4 cup extra-virgin olive oil
3 cloves garlic , minced
5 tomatoes , chopped
5 green bell peppers , chopped
1 jalapeno pepper , chopped
1 teaspoon paprika
1 teaspoon ground black pepper
1 pinch sea salt ( optional )
1 lemon , juiced
Matbucha is a traditional Moroccan and Israeli appetizer made from tomatoes, green bell peppers, and a small amount of spice. Instructions

1.Heat the olive oil in a large skillet over medium heat
2.Add garlic to the skillet and sauté for 1-2 minutes
3.Add tomatoes, green bell peppers and jalapeno pepper to the skillet and cook for 15-20 minutes, stirring occasionally until soft
4.Add paprika, ground black pepper, and salt to the skillet and stir to combine
5.Remove skillet from heat and let cool slightly
6.In a food processor, pulse the tomato pepper mixture until desired texture is reached
7.Transfer to a serving bowl and drizzle lemon juice over the top.
8.Serve and enjoy!
