Ingredients

3 tablespoons cooking oil
1 teaspoon cumin seed
200 g green peas
1 teaspoon ginger , chopped
1 teaspoon coriander powder
1/2 teaspoon kasuri methi ( crumbled between your palms )
1 teaspoon green chili , chopped
1/2 teaspoon chat masala
1/2 teaspoon red chili powder
1 teaspoon salt
1 teaspoon coriander leaves
1/2 teaspoon ajwain
250 g all-purpose flour
3 tablespoons oil
100 g water
Matar Potli Samosas are a unique twist on traditional Indian samosas. Instructions

1.Heat 3 tablespoons cooking oil in a pan over medium flame.
2.Add 1 teaspoon cumin seeds and sauté until they start to splutter.
3.Add 200 g green peas, 1 teaspoon chopped ginger, and 1 teaspoon coriander powder. Mix well and sauté for 2-3 minutes.
4.Add 1/2 teaspoon crumbled kasuri methi, 1 teaspoon chopped green chili, 1/2 teaspoon chat masala, and 1/2 teaspoon red chili powder. Mix well and cook for 5-7 minutes.
5.Add 1 teaspoon salt and 1 teaspoon chopped coriander leaves. Mix well and cook for 1-2 minutes. Remove from heat and let it cool.
6.In a large bowl, mix 250 g all-purpose flour, 3 tablespoons oil, 1/2 teaspoon ajwain, and 1/2 teaspoon salt. Knead into a stiff dough using around 100 g water.
7.Divide the dough into 10 equal parts. Roll out each part into a small circle.
8.Place 1 tablespoon of the green pea mixture in the center of each circle. Gather the edges of the circle and pinch together to form a potli or money bag shape.
9.Heat oil in a kadhai or deep frying pan over medium heat. Fry the potlis until golden brown, turning occasionally. Drain excess oil.
10.Serve hot with your favorite chutney or dip.
