Ingredients

2 cups red lentils
7 cups water
2 teaspoons salt
4 thin slices ginger
1 pinch ground dried turmeric
1/3 cup ghee ( clarified butter )
2 red onions , thinly sliced
2 cloves garlic , minced
2 teaspoons ground coriander
1 teaspoon ground cumin
1 dash cayenne pepper
1/2 cup chopped fresh cilantro

Instructions

1.Rinse the red lentils in a fine mesh sieve under running water until the water runs clear.
2.In a large pot, add the lentils, water, salt, ginger, and turmeric. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes or until the lentils are soft and fully cooked.
3.In a pan, heat the ghee over medium heat. Add the sliced onions and cook until they are golden in color. Add the minced garlic, ground coriander, cumin, cayenne pepper, and cook for 2-3 minutes or until fragrant.
4.Add the cooked lentils to the pan with the spiced onion mixture. Stir to fully combine. If the dahl is too thick, add more water to your desired consistency. 5. Serve hot garnished with chopped cilantro leaves.
