1/4 cup olive oil , divided , plus additional for greasing pan
1 1/2 lbs ground beef
kosher salt & freshly ground black pepper
1 red onion , roughly chopped
1 red bell pepper , roughly chopped
3 garlic cloves , finely chopped
1 1/2 teaspoons cayenne
1 tablespoon sweet paprika
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground oregano
1 can chopped tomatoes
2 cups low sodium beef broth
1/3 cup red wine vinegar
3 cans white navy beans , drained and rinsed
1 cup sour cream
2 1/2 cups shredded mozzarella cheese ( do n't shred the fresh mozzarella balls )
3/4 cup grated queso fresco
15 corn tortillas
2 avocados , peeled and seeded
1 lemon , juice and zest of

Instructions

1.Preheat oven to 375°F.
2.In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
3.Add ground beef and cook until browned, breaking it up as it cooks.
4.Add salt, pepper, red onion, red bell pepper, garlic, cayenne, sweet paprika, ground cumin, coriander, and oregano. Stir to combine well.
5.Pour in chopped tomatoes, beef broth, red wine vinegar, and white navy beans. Stir to combine well and bring to a simmer.
6.Let the mixture simmer for 10 minutes, stirring occasionally.
7.In a large mixing bowl, combine sour cream, mozzarella cheese, and queso fresco.
8.Grease a 9x13-inch baking dish with olive oil. Place a layer of corn tortillas on the bottom of the dish. Spoon half of the beef and bean mixture over the tortillas. Spoon half of the sour cream and cheese mixture over the beef and bean mixture. Repeat with another layer of tortillas, beef and bean mixture, and sour cream and cheese mixture.
9.Bake for 30-35 minutes, until the cheese is melted and bubbly. Top with avocado mixed with lemon juice and zest of lemon.
10.Serve hot and enjoy!
