Ingredients

1 1 lb chicken or 1 lb beef
1/2 - 1 lb steak-style French fries or 1/2-1 lb potato
coconut milk
1 teaspoon ground coriander
1 teaspoon cumin
1/2 teaspoon white pepper
4 teaspoons cardamom
7 bay leaves
1 teaspoon turmeric
1 red chili pepper
1 lemon peel
1 small red pepper , thinly sliced
1 medium tomatoes , sliced
1/3 cup onion , sliced
1 ginger
4 -5 garlic cloves
1 avocado
1/2 fresh orange , juice of
1 fresh lime , juice of
3/4 teaspoon oyster sauce
2 tablespoons fish stock
6 tablespoons Agave
2 tablespoons coconut oil
1/2 chicken or 1/2 vegetarian broth
1/4 unsalted dry-roasted cashews
2 cups rice
Masaman Curry is a Thai interpretation of an Indian curry purportedly as a dish that has Middle Eastern roots. It is made from a blend of spices, coconut milk, potatoes, and meat or vegetables. This delicious curry is creamy, thick, and hearty, making it perfect for lunch or dinner on colder days. The taste of this dish is mild, not too spicy, and ideal for those who prefer milder curries. The spice mix combines coriander, cumin, white pepper, cardamom, and turmeric. Instructions

1.Clean and cut the chicken or beef into bite-sized pieces
2.Mix the coriander, cumin, white pepper, cardamom and turmeric in a bowl
3.In a large pot or wok, heat coconut oil over medium heat and add the onion, garlic, and ginger. Fry for 2-3 minutes or until onion is slightly brown
4.Add the chicken or beef and fry for another 3-4 minutes or until partially cooked
5.Add the mixed spices and stir until the chicken or beef is coated
6.Stir in the potato or French fries, bay leaves, chili pepper, red pepper, and tomato. Fry for another minute or two
7.Pour in the coconut milk, fish sauce, Agave, and oyster sauce. Stir everything well and let the curry simmer on low heat for 20 minutes.
8.Garnish with cashews and serve with rice
