Ingredients

3 bay leaves
1 piece cinnamon stick

2 pounds beef tenderloin , cubed
3 cups chopped onion , divided
5 green chile peppers , halved lengthwise
1 piece fresh ginger root , grated
6 cloves garlic , minced
1/2 teaspoon ground turmeric
1 teaspoon salt
1/2 cup coconut oil
1/4 teaspoon whole mustard seeds
4 fresh curry leaves
2 1/2 teaspoons lemon juice
1 teaspoon ground black pepper
Masala Beef with Ginger and Curry Leaf is a spicy and flavorful dish that hails from the cuisine of India. Instructions

1.Heat a large skillet over high heat until very hot.
2.Add the bay leaves, cinnamon stick, cardamom pods, cloves, fennel seeds, and black peppercorns to the skillet. Toast for 1-2 minutes, until fragrant.
3.Add the cubed beef to the skillet and cook for 2-3 minutes on each side, until browned.
4.Add 2 cups of the chopped onions, green chile peppers, ginger root, garlic, turmeric, and salt to the skillet. Cook for 5-7 minutes, stirring frequently, until the onions are translucent.
5.Remove the beef mixture from the skillet and set aside.
6.In the same skillet, heat the coconut oil over medium-high heat.
7.Add the whole mustard seeds and curry leaves to the skillet and cook until the seeds start to pop.
8.Add the remaining cup of chopped onion to the skillet and cook for 3-4 minutes, until the onion is golden brown.
9.Return the beef mixture to the skillet and stir to combine with the onion mixture.
10.Stir in the lemon juice and black pepper.
11.Reduce the heat to low and simmer the mixture for 15-20 minutes, until the beef is tender and the flavors have melded together.
