Ingredients

4 medium russet potatoes , peeled and quartered ( about 1 1/2 lbs-any mealy potato will work )
1 tablespoon coarse salt
3 -4 medium scallions , finely minced
1/2 cup mexican queso fresco , crumbled
1/2 teaspoon fresh ground black pepper
salt , to taste
1/4 cup corn oil
1 teaspoon ground achiote
1 medium red onion , peeled and thinly sliced ( into rings or slivers )
2 tablespoons fresh lime juice
1/2 tablespoon salt
2 tomatoes , seeded and finely diced
2 fresh cayenne peppers or 2 serrano peppers , seeded , deveined , and finely chopped
1 tablespoon finely chopped cilantro

Instructions

1.Boil the potatoes and 1 tablespoon coarse salt in a pot of water until the potatoes are soft, 20-30 minutes.
2.Drain the potatoes and mash them until smooth.
3.Add the finely minced scallions, crumbled queso fresco, fresh ground black pepper, and salt to taste. Mix until all ingredients are well combined.
4.Divide mixture into 8-10 portions and shape them into patties about 1 inch thick.
5.Heat the corn oil in a large skillet over medium heat. Add the achiote and stir until the oil turns yellow.
6.Add the patties and brown on both sides, about 3-4 minutes per side.
7.Serve with a side of sliced red onion rings, diced tomatoes, chopped chilies, and cilantro on top. Drizzle with fresh lime juice on top.
