Gazpacho is a cold soup that originated in Spain. It is typically made with tomatoes, peppers, cucumbers, onions, and garlic blended together and served cold. Mary's Tropical Gazpacho puts a spin on the traditional recipe by adding tropical flavors like pineapple and red wine vinegar. The French or Italian bread chunks add a bit of texture to the soup, but can be left out for a gluten-free option. This soup is perfect as an appetizer or light meal on a hot summer day, as it is refreshing and packed with flavor.

2.Add the bread chunks and pulse 4-5 times, until the bread is incorporated but not completely smooth.
3.Pour the mixture into a large bowl and stir in the tomato juice until well combined.
4.Season with salt and black pepper, adjusting to taste.
