Ingredients

1 cup water
3/4 cup milk
3 eggs
5 tablespoons melted butter
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 package cottage cheese
1 package farmers cheese
1/4 cup sour cream
2 tablespoons white sugar
1 teaspoon vanilla extract
1 pinch salt
2 tablespoons butter , or as needed
Marylyn's Cheese Blintzes are a classic Eastern European dish that makes for a delicious and indulgent breakfast or dessert. The combination of smooth and delicate crepes filled with a sweet, slightly tangy cheese filling is simply irresistible. Instructions

1.Blend water, milk, eggs, butter, salt, and 1 teaspoon vanilla extract together in a blender until smooth.
2.Add flour to egg mixture and blend until batter is smooth. Let batter sit for 30 minutes to an hour.
3.Mix cottage cheese, farmers cheese, sour cream, white sugar, vanilla extract, and pinch of salt together in a bowl.
4.Heat a non-stick skillet over medium heat. Brush skillet with butter. Pour 1/4 cup batter into the skillet, swirling to coat the bottom of the skillet.
5.Cook until the edges of the crepe start to curl, 2 to 3 minutes. Flip and cook until other side is lightly browned, about 1 minute more. Repeat with remaining batter.
6.Preheat oven to 350 degrees F (175 degrees C).
7.Place a spoonful of cheese filling in the center of each crepe. Roll up and place seam-side down in a 9-inch square baking dish.
8.Bake in the preheated oven until heated through, about 20 minutes.
