8 ounces boneless lean pork , cut in matchstick pieces
3 dried mushrooms ( or more , depending on the size )
2 dried wood ear mushrooms
2 tablespoons peanut oil or 2 tablespoons vegetable oil
2 teaspoons fresh ginger , minced
1/2 cup sliced bamboo shoot , cut in matchstick pieces ( about 4 ounces )
1 carrot , shredded
1/2 cup fat free chicken broth
2 cups bean sprouts ( about 4 oz . )
2 green onions , cut into 1-1/2 inch slivers
1/2 cup hoisin sauce
8 Mandarin pancakes or 8 flour tortillas
2 tablespoons light soy sauce
2 tablespoons shao xing wine or 2 tablespoons dry sherry
1 tablespoon cornstarch
1 teaspoon peanut oil or 1 teaspoon vegetable oil
2 eggs , lightly beaten

Mu Shu Pork is a traditional Chinese dish made with stir-fried meat and vegetables. This recipe is a variation that excludes cabbage and adds more vegetables such as carrots, bamboo shoots, and bean sprouts. Instructions

1.Soak the dried mushrooms and wood ear mushrooms in hot water for 30 minutes. Squeeze out the excess water and cut into thin strips.
2.In a small bowl, mix together the soy sauce, shao xing wine or dry sherry, cornstarch, and water.
3.Heat 1 teaspoon of oil in a wok or large skillet over high heat. Add the beaten eggs and cook until firm. Remove from the wok and cut into thin strips.
4.In the same wok, heat 2 tablespoons of oil over high heat. Add the pork and ginger and stir-fry for 1-2 minutes.
5.Add the soaked mushrooms, bamboo shoots, carrots, and chicken broth. Stir-fry for 2-3 minutes.
6.Add the bean sprouts, green onions, hoisin sauce, and cooked egg strips. Stir-fry for another minute or until everything is heated through.
7.Serve with Mandarin pancakes or flour tortillas.
