1/2 cup onion , chopped
2 cans enchilada sauce
1 jar salsa , pace chunky mild
1 can corn
1 can black beans
2 cups cottage cheese
2 eggs
8 spinach tortillas
2 cups mexican cheese , shredded

Instructions

1.Preheat oven to 375°F (190°C).
2.In a skillet, brown the ground turkey with the chopped onions until fully cooked. Drain.
3.Add the package of taco seasoning and stir.
4.In a separate bowl, mix the cottage cheese and eggs together.
5.In a 9x13 inch baking dish, spread one can of the enchilada sauce on the bottom.
6.Lay four tortillas on top of the sauce.
7.Add half of the turkey mixture on top of the tortillas.
8.Next, add half of the corn and black beans.
9.Add another can of enchilada sauce on top of the turkey, corn, and black beans.
10.Add another four tortillas on top of the sauce.
11.Add the other half of the turkey mixture on top of the tortillas.
12.Add the rest of the corn and black beans on top.
13.Add the jar of salsa on top of the turkey, corn, and black beans.
14.Add the cottage cheese and egg mixture on top of the salsa.
15.Add the shredded Mexican cheese as the final layer on top of the cottage cheese mixture.
16.Bake for 35-40 minutes or until cheese is melted and bubbly.
17.Let cool before serving.
