Ingredients

8 slices day-old white bread , crusts removed
50 g butter , very soft
4 tablespoons orange marmalade , plus 4 additional teaspoons
300 ml milk
248 ml double cream
3 eggs
1 teaspoon vanilla extract
4 tablespoons golden caster sugar
1 tablespoon whiskey
icing sugar , for garnish
A classic British dessert, the Marmalade and Whiskey Bread and Butter Pudding is a staple on many family dinner tables. Made with simple ingredients of day-old bread, milk, cream, eggs and marmalade, this pudding is warm, comforting and incredibly tasty. The splash of whiskey adds a depth of flavour and is a perfect complement to the sweetness of the marmalade. This dessert can be made ahead of time and left to soak overnight to intensify the flavour.

Instructions

1.Preheat your oven to 180 C and grease a 2 litre ovenproof dish.
2.Spread the butter on the slices of bread, then spread 4 of the slices with the orange marmalade.
3.Cut the slices of bread into triangles and layer them into the prepared dish, alternating between marmalade covered slices with plain slices.
4.In a separate bowl, whisk together the milk, double cream, eggs, vanilla extract, caster sugar and whiskey until well combined.
5.Pour the custard mixture over the layered bread in the dish and leave for 10 minutes for the bread to soak up the liquid.
6.Sprinkle the remaining marmalade over the top of the pudding and bake in the preheated oven for 40-45 minutes.
7.Serve warm, dusted with icing sugar for an extra touch of sweetness.
