Ingredients

1 head fennel
1 large brown onion
3 -4 garlic cloves
bay leaf ( optional )
fresh thyme ( optional )
1/2 liter dry white wine
350 g fresh boneless fish fillets
1 liter fish stock
3 tablespoons tomato paste ( heaped )
Pernod or ouzo , to taste
fresh parsley , to taste
Tabasco sauce , to taste
maggi seasoning , to taste or Braggs liquid aminos , sauce to taste
lemon juice , to taste
salt & pepper , to taste
Marlyse's French Fish Soup is a traditional seafood dish from the south of France. It's a hearty and flavorful soup that's perfect for colder weather, as it provides warmth and sustenance. Instructions

1.Finely chop the fennel, onion, and garlic and set aside.
2.In a large pot, sauté the fennel, onion, garlic, bay leaf, and thyme over medium heat until the vegetables are translucent.
3.Deglaze the pot with the white wine and add the fish fillets, fish stock, and tomato paste.
4.Bring the soup to a simmer and let cook for 30-40 minutes.
5.Remove the bay leaf and thyme stems.
6.Using an immersion blender, blend the soup until smooth.
7.Adjust the seasoning with Pernod or ouzo, fresh parsley, Tabasco sauce, maggi seasoning or Braggs liquid aminos, lemon juice, salt and pepper to taste.
8.Serve hot with crusty bread and enjoy!
