Ingredients

4 lbs pork loin roast
1 cup wine vinegar , may need more to cover meat
4 garlic cloves , peeled and smashed
1/2 teaspoon ground cumin ( to taste )
1/2 teaspoon jamaican allspice
1/2 teaspoon ground cinnamon
1 teaspoon sweet red pepper paste ( see Recipe Description )
1 tablespoon coarse salt ( to taste )
1 teaspoon fresh ground black pepper or 1 teaspoon fresh ground white pepper
3 sprigs fresh rosemary ( optional ) or 3 sprigs fresh thyme ( optional )
Marinated Pork (Vinho D'alhos) is a traditional Portuguese dish that has been enjoyed for centuries. Instructions

1.Place the pork loin roast in a baking dish.
2.In a small bowl, whisk together the wine vinegar, smashed garlic, ground cumin, Jamaican allspice, ground cinnamon, sweet red pepper paste, coarse salt, fresh ground black pepper or white pepper.
3.Pour the marinade over the pork, making sure it is evenly coated.
4.Cover with plastic wrap and marinate in the refrigerator for at least 4 hours, or overnight if possible.
5.Preheat the oven to 350°F.
6.Remove the pork from the marinade and place it fat side up in a roasting pan.
7.Roast the pork in the preheated oven until an internal temperature reaches 160°F, approximately 1½ to 2 hours.
8.Allow the pork to rest for 10 minutes before slicing and serving.
