8 cups sliced button mushrooms ( about 1 pound ) or 8 cups sliced cremini mushrooms ( about 1 pound )

1/4 cup madeira wine or 1/4 cup dry sherry
1/3 cup fat free low-sodium beef broth
1 tablespoon balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper

Instructions

1.In a small bowl, whisk together shallot, balsamic vinegar, low sodium soy sauce, Dijon mustard, honey, and minced garlic to make the marinade. Coat the trimmed beef tenderloin with the marinade, cover with a plastic wrap and let it marinate in the refrigerator for 2-3 hours.
2.Preheat the oven to 425º F. Take the beef out of the marinade and discard the remaining marinade. Sprinkle the beef with a 1/2 teaspoon of salt and a 1/4 teaspoon of fresh ground black pepper. Heat up a skillet with high smoke point oil spray and brown the beef on high heat for 2-3 minutes on each side. Transfer the skillet to the oven and cook for 12 minutes or until your preferred internal temperature of the beef is reached.
3.Heat up a skillet with 1 tsp of olive oil on medium-high heat.
4.Add sliced onions and minced garlic and cook for 5-7 minutes, until the onions are caramelized.
5.Add mushrooms to the skillet, sprinkle with a pinch of salt and cook for 5-7 more minutes until the mushrooms are tender and juicy.
6.Stir in soy sauce, chopped thyme, madeira wine, beef broth, balsamic vinegar, salt, and fresh ground black pepper to the skillet. Bring to a boil, then reduce heat and simmer for 5-7 minutes until the sauce thickens slightly.
7.Slice the beef tenderloin and serve with the mushroom ragout.
