Ingredients

1 ripe pineapple , pared , 1 c of it coarsely chopped , the remainder in big slabs
10 garlic cloves
1 pinch ground cloves
1 1/4 teaspoons ground cumin
2 teaspoons kosher salt
3 guajillo chilies , toasted , seeded and torn into pieces ( pasilla chiles can be substituted )
2 ancho chilies , toasted , seeded and torn
1/2 cup distilled white vinegar
3 1/2 - 4 lbs pork shoulder , trimmed of excess fat and cut crosswise into 1/2-inch thick steaks
1 small corn tortillas or 1 small flour tortilla
minced white onion
chopped fresh cilantro
chopped tomatoes or pico de gallo
lime wedge

Instructions

1.In a blender, combine the coarsely chopped pineapple, garlic, ground cloves, cumin, salt, torn guajillo and ancho chilies, and white vinegar.
2.Puree until a smooth paste is formed.
3.Rub the paste thoroughly onto the pork, making sure the meat is evenly coated.
4.Place the pork and the pineapple slabs in a large resealable plastic bag and refrigerate for at least 2 hours or up to overnight.
5.Preheat your grill to medium-high heat.
6.Grill the pork for about 6-8 minutes per side or until the internal temperature reaches 145°F.
7.Remove the pork from the grill and let it rest for a few minutes before cutting it into thin slices.
8.Warm the tortillas on the grill or in a microwave.
9.Assemble the tacos by topping each tortilla with some pork, minced white onion, chopped cilantro, a few pieces of pineapple, and fresh tomatoes or pico de gallo.
10.Serve with a lime wedge and enjoy!
