1 tablespoon olive oil from anchovies
2 tablespoons minced garlic

1 green bell pepper , chopped
1/2 cup white wine
1 1/2 pounds grape tomatoes
1 can stewed tomatoes , with juice
6 anchovy fillets
1/2 teaspoon salt
black pepper to taste
1/2 teaspoon dried basil
1 teaspoon chopped parsley
1/2 teaspoon dried oregano
1 small bay leaf

Instructions

1.Heat olive oil in a large pot over medium heat.
2.Add garlic and onion. Cook for 2-3 minutes, or until the onion is soft and the garlic is fragrant.
3.Add chopped green bell pepper and cook for another 2-3 minutes.
4.Pour in white wine and simmer for 5 minutes, or until slightly reduced.
5.Add grape tomatoes, stewed tomatoes (with juice), anchovy fillets, salt, black pepper, dried basil, chopped parsley, dried oregano, and bay leaf.
6.Bring the sauce to a boil, then reduce heat and let simmer for 30-40 minutes until thickened. Remove the bay leaf before serving.
