Ingredients

1/2 lb beef ( ground round or other beef )
1 tablespoon cooking oil
4 stalks celery , chopped
1 large onion , chopped
2 cups chopped curly parsley
2 eggs , hard boiled , chopped
1 1/2 cups raisins
1 cup parmesan cheese , grated
1 1/4 cups chopped walnuts ( or pine nuts or roasted chestnuts )
2 teaspoons dried crushed rosemary
2 teaspoons dried crushed oregano
2 teaspoons dried crushed thyme
3 bay leaves
1 tablespoon poultry seasoning ( or 1 teaspoon dried sage , 1 teaspoon marjoram , 1/2 teaspoon ground ginger and 1/2 teaspoon ground nu )
1 tablespoon kosher salt , plus more to taste
1 tablespoon pepper

Instructions

1.In a large skillet, cook the beef in oil over medium heat until browned. Drain and place in a large mixing bowl.
2.In the same skillet, sauté the celery, onion, and parsley until tender. Add to the mixing bowl with the beef.
3.Mix in the hard boiled eggs, raisins, Parmesan cheese, walnuts, rosemary, oregano, thyme, bay leaves, poultry seasoning, kosher salt, and pepper.
4.Remove the bay leaves and stuff the mixture into your turkey or bake in a covered casserole dish at 325°F for 1 1/2 hours.
