2 tablespoons olive oil
4 chicken thighs ( bone in , skin removed )
3 links Italian sausage
1 lb ground beef
1/4 cup parmesan cheese
1 egg
1/4 cup breadcrumbs
2 tablespoons chopped fresh parsley
1 garlic clove , minced

1/2 large onion , diced
3 garlic cloves
1 can tomatoes
1 can fire-roasted tomatoes
2 cans tomato sauce
5 leaves fresh basil

2 lbs ricotta cheese
1 egg
2 tablespoons chopped fresh parsley
1/3 cup grated parmesan cheese
1 lb lasagna noodle
grated parmesan cheese
2 packages shredded mozzarella cheese

Instructions

1.Preheat oven to 350°F. Grease a 9x13 inch baking dish with non-stick cooking spray
2.In a large skillet heat olive oil and add chicken thighs, cook until browned on all sides. Remove chicken from the skillet.
3.Add sausage and ground beef to the same skillet and cook until browned. Drain the grease.
4.Add parmesan cheese, egg, breadcrumbs, chopped parsley, minced garlic to the meat mixture. Season with salt and pepper, stir and set aside.
5.Add onions and garlic to the skillet, sauté until onions are translucent. Add canned tomatoes, fire-roasted tomatoes, tomato sauce and basil leaves. Season with salt and pepper. Bring to a simmer and let cook for 10 minutes.
6.In a medium mixing bowl, combine ricotta cheese, egg, chopped parsley and grated parmesan cheese.
7.Cook the lasagna noodles according to package instructions and drain them.
8.Start layering in the prepared baking dish, first with a layer of meat sauce, followed by a layer of noodles. Then add a layer of the ricotta cheese mixture and sprinkle some grated parmesan cheese and shredded mozzarella cheese on top. Repeat the layers until the baking dish is full.
9.Cover with aluminium foil and bake in preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is golden brown. Let it cool for 10 minutes before serving.
