Ingredients

1/3 cup vegetable oil ( do not use olive oil )
1/2 cup finely minced white onion
2 cups uncooked converted long-grain white rice
1/2 cup dry white wine
3 1/2 cups chicken stock or 3 1/2 cups water
1/2 - 1 whole large head of garlic , broken into cloves and peeled
1 tablespoon kosher salt
2 cups Baby Spinach , washed and stemmed

Instructions

1.In a large heavy pot, heat the vegetable oil over medium-high heat until it shimmers.
2.Add the onion and stir for a few minutes, until it is translucent.
3.Add the rice and stir well for a few minutes until the rice is lightly toasted.
4.Add the white wine and stir until the wine is absorbed.
5.Add the chicken stock or water, garlic cloves and salt. Stir well and bring to a boil.
6.Reduce heat to a simmer and cover the pot. Cook for 18-20 minutes.
7.Remove from heat and allow to stand for 3-5 minutes.
8.Fluff rice with a fork and add spinach. Stir well.
9.Cover the pot and let it stand for a few minutes until the spinach wilts and the rice is heated through.
