Ingredients

1 beef roast
3 slices bacon , cut into 1 inch pieces ( I use a scissor to save time )
8 garlic cloves , 6 quartered , 2 mashed
1 -2 teaspoon sea salt
1/4 cup olive oil
1 tablespoon smoky paprika
1/4 cup chopped parsley
1 teaspoon oregano , to taste
1/2 teaspoon thyme , to taste
1 tablespoon red wine vinegar

Instructions

1.Cut 6 slits in the beef roast and stuff a quartered garlic clove in each slit.
2.Season the meat with salt and smoky paprika on both sides.
3.Add olive oil to a skillet over medium heat and brown the meat on both sides.
4.Arrange the bacon slices in the bottom of the crock pot and place the meat on top of it. Add the chopped parsley, mashed garlic, oregano, thyme, and red wine vinegar on top of the meat.
5.Cover and cook on low for 7-8 hours or until the meat is fork-tender.
6.Serve hot with your favorite vegetables and enjoy!
