Instructions

1.Preheat the oven to 350 degrees
2.Slice off the tops of the bell peppers and remove the seeds and membranes
3.Brush the peppers with olive oil

6.Cook spinach in a skillet over medium heat until wilted
7.In a bowl, combine cooked rice, spinach, and half the cheese.
8.Stuff the peppers with the rice mixture
9.Top each pepper with the remaining cheese.
10.Bake for 25 minutes until the cheese is melted and the peppers are tender.
