Ingredients

4 boneless skinless chicken breasts
1 quart margarita mix
1/2 cup diced onion ( red or white )
1 1/2 cups diced tomatoes
1/2 serrano pepper , diced very small
1/4 cup chopped cilantro
1 large minced garlic clove ( you can always add more )
1 teaspoon champagne or 1 teaspoon white wine vinegar
2 tablespoons margarita mix
salt and pepper
1/4 cup ranch dressing
1 cup sour cream
3 -4 tablespoons taco seasoning
corn tortilla strips

Instructions

1.Place chicken breasts in a resealable plastic bag.
2.In a blender, combine margarita mix, diced onion, diced tomatoes, diced serrano pepper, chopped cilantro, minced garlic clove, champagne or white wine vinegar and two tablespoons of margarita mix. Blend until mixed.
3.Reserve 1 to 1 1/2 cups of the marinade and pour the rest of the marinade over the chicken. Seal the bag and refrigerate for at least three hours, or overnight.
4.Mix the reserved marinade with the ranch dressing, sour cream and taco seasoning to make a sauce.
5.Preheat grill to medium-high heat.
6.Remove chicken from marinade and discard marinade.
7.Grill chicken for five to seven minutes per side, or until cooked through.
8.Top chicken with sauce, Mexican blend cheese and corn tortilla strips.
