8 choconostle fruit , peeled
4 limes , juice of
1 English cucumber , peeled , seeded and chopped
1 serrano chili , seeded and diced
salt & freshly ground black pepper
16 large shrimp , shelled , deveined and sliced in half lengthwise
pomegranate seeds

Instructions

1.Bring a large pot of salted water to a boil and cook cactus leaves for 8-10 minutes or until tender. Drain and let cool.
2.In a blender, combine choconostle fruit, lime juice, cucumber, and serrano chili. Blend until smooth.
3.Season the sauce with salt and pepper to taste.
4.In a large bowl, toss together the shrimp, sauce, and kosher salt.
5.Add in the cactus leaves and stir well to combine.
6.Refrigerate for at least 30 minutes before serving.
7.When ready to serve, top with pomegranate seeds.
