Ingredients

1 1/2 lbs all-purpose flour
1/2 lb large raisins
1/2 lb currants
1/2 lb sultana
1/2 lb chopped dried mixed citrus peel
1/2 lb sugar
10 ounces butter
1/2 teaspoon mixed spice
1/2 teaspoon cinnamon ( but I would use more )
1 tablespoon golden syrup
2 teaspoons bicarbonate of soda
1 pint buttermilk

Instructions

1.Preheat the oven to 170°C/ 325°F / Gas mark 3.
2.Mix together the flour, mixed spice, cinnamon, sugar, dried fruit, citrus peel and bicarbonate of soda in a large bowl.
3.Melt the butter in a saucepan over low heat. Once melted, turn off the heat and stir in the golden syrup and buttermilk.
4.Pour the wet ingredients into the dry ingredients and mix until a dough forms.
5.Grease a 2lb loaf tin with butter and add the dough to it.
6.Bake for 1 and a half hours, or until a skewer comes out of the loaf clean.
7.Once done, remove from the oven and allow to cool before slicing and serving.
