2 cloves garlic , peeled
20 fluid ounces chicken broth
2 jalapeno chiles , chopped

6 fluid ounces vegetable oil
1/2 teaspoon parsley

Instructions

1.Rinse the rice under cold running water and drain well.
2.Heat up the vegetable oil in a large skillet over medium heat. Add the rice and stir occasionally until light brown in color. Drain the excess oil and set aside.
3.In the same skillet, sauté the onion and garlic until soft and fragrant. Add the tomatoes, jalapeno chiles and chicken broth. Stir well.
4.Add in the rice and salt. Bring to boil then reduce the heat to low and let it Simmer for about 25 minutes or until the rice is cooked.
5.Once cooked, fluff with a fork and sprinkle with parsley.
6.Serve hot and enjoy!
