Ingredients

3 lbs lamb shoulder , on the bone cut into 6 even sized pieces ( this is preferred but if you ca n't get it , 6 large pieces of lamb will do )
water
salt and pepper
1/4 cup clarified butter
1/4 cup pine nuts ( optional )
1 large yellow onion , chopped
1 1/2 teaspoons turmeric
1/2 teaspoon ground allspice
1 piece cinnamon or 1 piece cassia
2 cups full fat yogurt ( skim and fat free wont work , they 'll come out too thin )
1 egg white , beaten till frothy
2 teaspoons cornflour
1 teaspoon salt
Mansaaf is a traditional dish from Jordan, Palestine, and other Middle Eastern countries. It's usually served on special occasions, such as weddings, Eid holidays, and family gatherings. The dish consists of tender lamb meat that's flavored with spices and served with a creamy yogurt sauce and crunchy pine nuts. Instructions

1.Rinse the lamb pieces thoroughly and season them with salt and pepper.
2.In a deep pot, melt the clarified butter and sauté the onions until they turn translucent.
3.Add the lamb pieces and sauté for a few minutes until they start to brown.
4.Add enough water to the pot to cover the lamb pieces, then add turmeric, allspice, and cinnamon or cassia.
5.Cover the pot and let the lamb simmer for 1.5-2 hours until it's fully cooked and tender.
6.In a separate bowl, whisk the full-fat yogurt, egg white, cornflour, and salt until the mixture becomes smooth and creamy.
7.When the lamb is cooked, transfer it to a serving dish (traditionally, a large platter lined with flatbread).
8.Pour the yogurt sauce over the lamb and garnish with pine nuts.
9.Serve hot with rice or bulgur.
