Ingredients

1 cup ginger ale
1 cup water
8 cups peeled and finely diced mangoes , about 12 fresh mango
1/2 cup rice wine vinegar
1/2 cup light olive oil
1 tablespoon granulated sugar
salt and pepper
2 cucumbers , peeled , seeded and finely diced
1/2 cup finely diced red onion
3/4 cup chopped fresh cilantro
Mangospacho is a delicious variation of the classic Spanish soup, gazpacho. Unlike traditional gazpacho, mangospacho is made with ripe mangoes, which give the soup its sweet and tropical flavor. Instructions

1.In a blender, puree the ginger ale, water, mangoes, rice wine vinegar, olive oil, sugar, salt and pepper until smooth.
2.Pour into a large bowl and stir in the cucumber, red onion, and chopped cilantro.
3.Cover and chill for at least 1 hour before serving.
