Ingredients

1 cup rice ( use correct rice for best results , sweet glutenous )
3/4 cup coconut milk
1/3 cup sugar
1/2 teaspoon salt
3/4 cup coconut milk
1 teaspoon rice flour ( make a slurry with 1 tbsp cold water then add to remaining ingredients , can substitute all-purpose f )
1/4 teaspoon salt
2 -3 mangoes
chopped almonds or cashew nuts

Instructions

1.Rinse the rice until the water runs clear and then soak it in water for at least 4 hours, or overnight.
2.Drain the rice, then place it in a bamboo steamer lined with cheesecloth. Steam the rice over boiling water for 20-25 minutes, or until it's tender and fully cooked. Set aside.
3.In a saucepan, combine the 3/4 cup of coconut milk, sugar and 1/2 teaspoon salt over medium heat. Cook, stirring frequently, until the sugar has dissolved completely. Reduce the heat to low, add the steamed rice and stir until the rice is fully coated.
4.To make the mango topping, combine the remaining 3/4 cup coconut milk, rice flour, and 1/4 teaspoon salt in a saucepan over medium heat. Stir constantly until the mixture thickens and begins to boil. Reduce the heat to low and cook for another 3-4 minutes.
5.Peel the mangoes and slice them into small pieces. Toast the chopped almonds or cashew nuts in a skillet over medium heat, stirring frequently, until fragrant and golden brown.
6.To serve, divide the sticky rice between bowls or plates. Top with the sliced mango and toasted nuts. Drizzle the mango topping over everything, and enjoy!
