4 -5 lbs beef short ribs , bone in
1 lime , zest and juice
1 cup long grain rice
2 tablespoons instant minced onion
1 tablespoon sweet Hungarian paprika
2 teaspoons instant minced garlic
2 teaspoons dried thyme leaves , crushed
1 teaspoon coarse salt
2 teaspoons ground allspice
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1 tablespoon turbinado sugar
2 teaspoons fresh coarse ground black pepper
1 teaspoon cayenne pepper
1 ripe mango , peeled , pitted and cut into small cubes
1 cup orange juice
1 medium onion , peeled , chopped
3 garlic cloves
1 can dice cut tomatoes
2 tablespoons cider vinegar
2 tablespoons turbinado sugar
1/4 cup dark raisin
1 habanero pepper

Instructions

1.Preheat your oven to 275 degrees Fahrenheit.
2.In a mixing bowl, combine lime zest, minced onion, sweet Hungarian paprika, minced garlic, thyme leaves, coarse salt, ground allspice, nutmeg, ginger, turbinado sugar, fresh ground black pepper, and cayenne pepper. Mix together all the spices until well combined.
3.Add the beef short ribs to the mixture and rub with the spice mixture, making sure to coat all sides of the ribs.
4.In a large skillet over high heat, sear the ribs on all sides until they are well browned.
5.Transfer the beef short ribs to a large roasting pan.
6.In the same skillet where you seared the ribs, add chopped onion and garlic, sauté until the onion is translucent.
7.Add diced tomatoes, orange juice, cider vinegar, turbinado sugar, habanero pepper, raisins, and cubed mango. Cook the mixture until it has reduced by half.
8.Pour the mango mixture over the beef short ribs and add water to the roasting pan until the ribs are almost completely submerged.
9.Cover the roasting pan with aluminum foil and place it in the oven. Cook for 4 to 5 hours, or until the meat is tender and falls off the bone.
10.Remove the foil and reduce the oven temperature to 250 degrees Fahrenheit. Cook for an additional 30 minutes, or until the sauce has thickened and the meat is glazed with the mango sauce. Serve with long grain rice on the side.
