1 mango , peeled and sliced into matchsticks
1 cup seedless cucumber , sliced into matchsticks

4 ounces rice noodles ( very thin kind )
1/4 cup peanuts ( chop very finely )
20 rice paper sheets ( plus extra in case some tear )
1/4 cup rice vinegar
1/4 cup water
1 teaspoon asian chili oil
1 garlic clove ( minced )
3 tablespoons peanuts ( chopped )
1 1/2 teaspoons sugar

Instructions

1.Boil rice noodles for 2-3 minutes and mix with rice vinegar, sugar, minced garlic, chili oil, and chopped peanuts in a large bowl.
2.Fill a large shallow bowl with warm water, dip a rice paper sheet in the water for about 15 seconds until it softens.
3.Place the soft rice paper onto a clean kitchen cloth, add mango and cucumber matchsticks, rice noodle mixture, cilantro leaves, and finely chopped peanuts in the center of the rice paper sheet.
4.Roll tightly starting from the bottom of the rice paper, fold in both sides, and continue rolling upwards until sealed.
5.Repeat steps 2-4 until all of the ingredients are used up.
6.Mix dipping sauce ingredients (rice vinegar, water, sugar, minced garlic, chili oil, and chopped peanuts) in a small serving bowl, and serve with the summer rolls.
